BUDGET MEAL RECIPES

Yeah i know we kinda get a little bit bored during our days off. We tend to look for something we could kill our time with. Well, aside from general house cleaning, shopping, movie marathons, WOW playing if i may add, or simply playing dead all the day long, feeling lazy.. why not make a good home cook meal for the family. No family available? not a problem! invite your friends over. duh! Remember! Don’t cook a very good meal if you don’t have anyone to share it with or you’ll get bloated. lol. Here are some recipes you might wanna try at home! They’re healthy (well some of em), and they’re sumptious!

First on the list,

BUDGET BEEF STROGANOFF

Ingredients:

1 1/2 – 2 lb. round steak
1 tsp. salt
1/8 tsp. pepper
1 onion, sliced
1/4 tsp. garlic salt
1 tbsp. Worcestershire sauce
1 1/2 c. beef bouillon
1 tbsp. catsup
1/4 lb. fresh sliced mushrooms
1/3 c. flour
1 c. sour cream

OMG how to cook this?

Cut steak into 1/4″ strips. Coat with salt and pepper. Drop into bottom of crock pot with onion. Mix garlic salt, Worcestershire sauce, bouillon and catsup. Pour over meat. Cover and cook on low for 6 to 8 hours or until tender. Turn control to high. Add mushrooms. Dissolve flour in a small amount of water. Add to meat mixture, stirring until blended. Cook on high for 15 minutes or until slightly thickened. Stir in sour cream; turn off heat. Serve with rice or noodles.

BUDGET LASAGNA

Ingredients:

8 oz. pkg. lasagna noodles
1 lb. Mozzarella
1 lb. mild cheddar or American cheese
3 lb. lean ground beef
1 med. onion
1 1/2 tsp. Italian seasoning
1/2 tsp. garlic powder
3 tsp. salt and sugar
1/4 tsp. black pepper
1 (12 oz.) can tomato paste
4 (12 oz.) cans water
1 (#3) can tomatoes

Procedure:

May use oregano, sweet basil, and garlic to taste instead.

Brown ground beef with onion, seasonings, tomato paste, water, and tomatoes. Grate cheese. Cover bottom of 9 x 13 cake pan with sauce. Lay a layer of UNCOOKED lasagna noodles over the sauce then cover with the grated cheeses. Then repeat the three layers. Finish with meat over the cheese.

Make this the day before or early morning and let stand in refrigerator for noodles to soak up juices.

Cover with foil and bake 2 hours at 325 degrees. Remove foil the last 1/2 hour. Cool 15 minutes before serving. Then cut and serve.

BUDGET MEATBALLS

Ingredients:

1 lb. ground beef
1 c. raw grated potatoes
1 c. Italian bread crumbs
1 egg, slightly beaten
1 pkg. dry onion soup mix
Procedure:
Mix all ingredients except dry soup mix. Form into small meatballs. Brown in a skillet. Place browned meatballs in a casserole dish. Follow directions on soup package to make gravy. Cover meatballs with gravy. Bake covered at 350 degrees for 30-45 minutes.

BUDGET VEGETABLE AND CHIP DIP
Ingredients:
1 pkg. (8 oz.) cream cheese, softened
2 tbsp. French dressing
2 tbsp. minced, dehydrated onion
1/4 c. catsup
Procedure:
Mix with mixer and serve with vegetables, crackers or chips.
TOP-OF-THE-STOVE BUDGET MEAL
Ingredients:
2 tbsp. melted shortening
1 layer sliced onions
1 layer ground beef
1 layer sliced potatoes
1 layer celery (opt.)
1 can tomato soup diluted with 1 can water
1 tbsp. Worcestershire sauce
1/2 tsp. chili powder
Salt & pepper to taste

Procedure:
Steam slowly in covered frying pan until done, about 40 minutes.
